Local restaurant owners joined Henry County Judge Executive for a diabetes proclamation on Monday, in celebration of World Diabetes Day (Nov. 14).
Pictured with Brent are Mona Huff, Chat N Nibble owners Alice and Tom Ferguson, KIPDA Rural Diabetes Coalition member Dallas Milliner, and Scriber’s Station owner Connie Scriber. Both restaurants, along with Dairy Queen in Eminence and Keeper's Seafood, are making a commitment to serve healthier food options for customers. At Chat N Nibble, there are daily healthy specials, like a turkey wrap with lettuce, tomato and onion, with fruit on Wednesdays. The Chat N Nibble also offers a sugar free pineapple cream pie for diet-conscious customers. Scribers will offer entrees prepared with olive oil, or a Lola burger without the bun (and with steamed vegetables with herbs). Scribers also will box half of a meal before serving, upon request. “We want you to have the pleasure of dining with family and friends; but with healthier choices, if that is your desire,” their flier said. Alice Ferguson said her parents both were diabetic, and several customers are diabetic. Making healthier options available, she said, “is a good cause, and there are so many people with diabetes.”
